一种辣椒功能饮料的研制(12400字)
摘要:以辣椒精为原料,生产一种辣椒饮料,研究了辣椒饮料的配方组成、稳定剂和杀菌条件。结果表明,辣椒饮料的配方为:辣椒精0.6%、蛋白糖0.3%、柠檬酸0.1%、菠萝香精0.004%,复合稳定剂(1:1:1)琼脂+明胶+海藻酸钠0.3%。最佳杀菌工艺条件:80℃杀菌10min。

Production of a kind of Capsicum functional beverage
Abstract:A kind of capsicum beverage was produced using capsicum oleoresin as material. The formula, stabilizer and sterilization condition of capsicum beverage were studied. The result showed that the best formula for capsicum beverage was capsicum oleoresin 0.6%, protein sugar 0.3%, citric acid 0.1%, pineapple essence 0.0004%, compound stabilizer( agar 0.1%+ gelatin0.1% + sodium alginoate 0.1%). Best sterilization process condition was 80 ℃ 10min.
